These delightful and fun gluten free, coconut flour chunky muffins use coconut oil and a handful of spices and mix-ins to make one very unique and delicious treat. Enjoy these wheat free, grain free muffins as a healthy, cane sugar free and dairy free snack or throw in some chocolate and keep them for dessert.
Whole Wheat Toasted Coconut Banana Muffins
In large bowl combine the 3 flours, baking powder, salt and chia seeds. In separate bowl cream together coconut oil and sugar. Stir in eggs, maple syrup, and mashed banana until well blended. Add banana mixture to flour mixture and mix batter until just moist. Pour into prepared muffin tins and garnish with coconut chips.
These delicious, low sugar, whole wheat, chocolate muffins are made with coconut oil and are a fantastic way to use up overripe bananas!
