Serves 8

Garnish options:

Put oil in a large pot on medium heat. Add cumin seeds, stirring occasionally until brown and aromatic. Add onion and red chili flakes and sauté until soft about 5 minutes. Add ground beef and sauté until browned. Add remaining ingredients except salt and garlic cloves. Bring to a boil then reduce heat to low and simmer at least 15 minutes. Add garlic and salt for last 5 minutes of cooking.

Garnish and serve with tortilla chips.

Coconut Snickerdoodle Delights!

Makes approximately 6 dozen; cut in half for smaller quantity.

Heat oven to 375 degrees.

Extra cinnamon and sugar mixed together for sprinkling

Cream together butter, coconut oil, sugar, honey, vanilla and eggs in a large mixing bowl on medium speed. Be sure to scrape the sides of the bowl consistently until smooth. Sift in flour, baking soda, salt and cinnamon. Add coconut and ground flaxseeds. Place each teaspoon of rolled dough on an ungreased cookie sheet.

Bake for 5 minutes. Remove from oven and gently press each cookie with the bottom of a glass. Now sprinkle each cookie with the cinnamon and sugar mixture and return to the oven to bake an additional 3 to 4 minutes until a light golden color. Let cool 5 minutes on cookie sheet. Move to a wire rack to finish cooling. Enjoy!

Coconut Chicken Curry Stir-fry

  • 3 Tablespoons coconut cream concentrate (or more)
  • 1 cup water
  • 1/4 cup plain yogurt
  • 5 stalks cilantro (or to taste)
  • 1 1/2 Tablespoon curry powder
  • 2 large cloves fresh garlic
  • chunk of fresh ginger to taste
  • 1 1/2 teaspoon Himalayan salt
  • 2 Tablespoons coconut oil (plus 2 more for browning)
  • 1/4 cup dried coconut flakes
  • 1 lb cubed white meat (chicken or turkey)
  • 2 cups broccoli
  • 1 can sliced water chestnuts − drained

In a food processor or blender, process
the coconut cream concentrate, water, yogurt, cilantro,
curry, garlic, ginger, salt, 2 tablespoons coconut oil, and
(optional) water chestnuts, and coconut flakes until smooth.
Set aside.

In a hot pan, add oil and meat of your
choice and brown. Add the broccoli and water chestnuts (if
not already used) along with the curry sauce to the meat and
let simmer for 20-25 minutes, stirring occasionally.

Serve with rice or separately and
enjoy!

Oatmeal Coconut Crisps

 Preheat oven to 375 degrees.

Stir together dry ingredients except sugar. Cream coconut oil and sugar together in an electric mixer on medium speed until mixture looks creamy. Add eggs one at a time then extracts. Add dry ingredients into sugar mixture gradually and mix until everything is well mixed together.

Drop dough by teaspoonfuls/tablespoonfuls onto a cookie sheet and flatten slightly with a fork. Bake in preheated oven at 375 degrees for 10 to 12 minutes.

Hot Cocoa

Pour boiling water into a mug and let sit for about 20
seconds. Empty the water and put one tablespoon full of the
virgin coconut oil in it. It melts quickly as you stir in
one tablespoonful of cocoa powder and a pinch of Himalayan
salt. Use a minimum of 1/4 tsp. of whole organic sugar to
cut the bitterness of the cocoa and then add stevia drops to
taste. Usually about 12 drops. Pour boiling water in the cup, stir, and add cream or milk to taste. This makes a great treat very quickly. Other sweeteners can be used.

Pumpkin-Coconut Squares


Procedure:

Pre-heat oven at 350 degree F.

Mix the coconut flour with baking powder. Set  aside. Blend
all the rest of the ingredients and then mix with the
coconut flour and baking powder mixture. Mix well. Grease an
8 x12 rectangular pan with coconut oil. Pour the mixture on
the pan.
Bake at 350 degree F for 45 minutes.
Test to see if it is already done by inserting a clean
toothpick in the middle. When the toothpick comes out clean
or with no residue, the mixture is done.

Cool down. Cut into squares.
