Preheat oven to 350° F.

Whisk eggs together in bowl with paprika, salt, pepper, and heavy cream. Add cheese, turkey, basil, and 1 tablespoon coconut oil. Pour mixture into greased muffin tins (use 1/2 tablespoon coconut oil to grease muffin tins) and then top each one with a slice of tomato.

Bake for 15-20 minutes or until golden brown and firm in the center.

Servings: about 15 meatballs
Preparation Time: about 30 minutes

  • 1 pound grass-fed ground beef
  • 1 egg
  • 3/4 cup mushrooms, finely chopped
  • 1 small onion, chopped finely
  • 1 clove garlic, minced or pressed through garlic press
  • small handful fresh basil, minced finely (about 1 tablespoon minced)
  • 1 teaspoon Himalayan salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne
  • 1 tablespoon coconut oil

Mix all ingredients together, except coconut oil. Form into meatballs.

Heat skillet and add coconut oil. Brown meatballs in coconut oil on medium-high heat.

Place browned meatballs in baking dish. Bake at 425° F for about 15 minutes, or until done.

Enjoy plain or serve with your favorite red sauce.

Preheat oven to 350 ° F.

Melt coconut oil and butter. Reserve two tablespoons of the melted butter/coconut oil.

Mix the rest of the oil mixture and all remaining ingredients with the shredded butternut squash. Form into patties and place on a baking sheet (makes about 16 patties).

Brush with reserved butter/coconut oil and bake in heated oven for 45 minutes – 1 hour.

In a large bowl, combine ground turkey, almond flour, coconut flour and egg. Mix until well blended and form into 1″ meatballs.

Place meatballs on a lightly oiled baking sheet. Bake at 375° F for about 20 minutes or until cooked through.

Meanwhile, heat coconut oil in a large skillet. Add garlic and onions and sauté until soft. Add in coconut milk, curry, salt and pepper. Cook over low-medium heat for about 10 minutes. Add meatballs to curry sauce and top with cilantro.

Heat oven to 400° F.

Rinse poblano peppers and coat in 2 tablespoons coconut oil. Place in casserole dish (side by side) and place in oven, turning over when outside becomes “roasted” and skin begins to blister. Once both sides are roasted, remove from oven to cool. (Should take about 10-15 minutes per side.)

Meanwhile, cook beef with 1 tablespoon coconut oil, chopped onion, one chopped poblano, and 1 teaspoon cumin powder. Cook until beef is done and onions and peppers are tender.

When baked poblanos are cool enough to touch, slice lengthwise on one side, leaving in casserole dish. Remove the stem and seeds, and scoop out any remaining seeds carefully with a spoon. Stuff each poblano with ground beef mixture, and top with grated cheese.

Using same pan that beef was cooked in, add remaining 2 tablespoons coconut oil and flour, stirring over low-medium heat. Add water, tomato sauce, chili powder, garlic and salt, stirring until chili sauce thickens. Pour sauce over beef and cheese stuffed poblanos. Cook another 15 minutes.

Remove from oven to cool slightly before serving. Garnish with olives, fresh avocados, and sour cream, if desired.

Add garlic cloves to 2 tablespoons of coconut oil and roast at 300° F for 20 minutes.

Meanwhile, heat 2 tablespoons of coconut oil in a pan on medium heat. Add sliced onions and sauté until they become soft. Add the beet greens and sauté for 5 to 10 minutes on medium heat. Add 1/2 teaspoon of salt. Set aside.

Add garlic, coconut oil, 1/2 teaspoon salt, and 1/2 teaspoon chipotle chili pepper to cooked white beans then blend with an immersion blender, stand blender, or food processor. Add additional melted coconut oil or broth of choice if necessary to make bean mixture smooth.

To assemble quesadillas, spread about 1/2 cup of prepared bean mixture on each tortilla, top with the greens mixture, then sprinkle with shredded cheese. Place another tortilla on top.

Drizzle each tortilla with melted coconut oil and bake at 350° F for 20 minutes, flipping after 10 minutes. Serve hot.

  • 1 pound ground beef, bison or turkey
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 1 tablespoon coconut oil
  • 1 spaghetti squash, cooked and strands removed
  • 2 cups collard greens
  • 1 cup spinach
  • 8 ounces ricotta cheese
  • 1 onion, sliced
  • 1 garlic clove, minced
  • 2 roma tomatoes, thinly sliced
  • 1 cup shredded cheese (or dairy-free), optional
  • 1 cup pasta sauce

In a large bowl, combine ground beef, fennel, coriander, basil and oregano. Mix and form into 1-2″ meat balls. Place meatballs in a large skillet with about 1 tablespoon coconut oil. Cook on each side for about 8-10 minutes or until cooked through.

Place spaghetti squash strands in a greased 9×9 baking dish. Mix in collard greens, spinach, ricotta cheese, onions and garlic. Top mixture with meatballs. Top meatballs with tomato slices and shredded cheese. Pour over pasta sauce.

Bake at 350° F for about 30 minutes.

  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon psyllium husk powder
  • 2 tablespoons butter, melted
  • 1 egg
  • 1 cup boiling water
  • 2 ounces cream cheese, softened at room temperature
  • 2 jalapeno peppers, finely chopped

Pre-heat oven to 400° F.

Mix dry ingredients in a bowl, combine well. Add the butter and eggs, mix thoroughly until mixture resembles breadcrumbs.

Boil the water and add to the mixture a bit at a time, stirring thoroughly until you have a dough. Cut the dough into four pieces. Roll each quarter into a ball then place each one on a strip of parchment paper. Place another strip of parchment paper over each dough ball and roll each one out into rectangles about 8 x 4 inches each.

Trim any edges and spread the cream cheese over the strip. Sprinkle the chopped jalapeno over the cream cheese. Using the parchment paper base, take one end and roll up the dough like a Swiss roll, keeping it fairly tight. Cut the dough into half, then half again. This will make your pinwheel shape.

Place the pinwheel face down on a parchment paper lined baking tray. Bake for 20 minutes, turning over after 10 minutes.
