  • 8 quart pot
  • 4 teaspoons coconut oil
  • 1 large yellow onion
  • 4 carrots
  • 6 sticks celery
  • 8 ounces mushrooms
  • 1 pack frozen peas
  • 4 large garlic cloves
  • 3 medium/large heads cauliflower
  • 8 ounces fermented soy

Coat the bottom of a large deep pot with coconut oil. Then chop the onion, carrots, and celery, add these to the pot.

Next add the mushrooms and peas to the pot. Dice the garlic and add that to the other veggies in the pot. Let those veggies cook in the coconut oil for about 5 to 10 minutes on medium hight heat.

Then add the 3 heads of cauliflower to your blender and dice up into rice size pieces. Next add it to the rest of the veggies then pour about 4 fluid ounces of the fermented soy sauce into the pot and let cook for 45 minutes on medium heat, stirring occasionally.

Allow to cool and enjoy.

  • 1 large eggplant
  • 3 tablespoons Tahini
  • 4 cloves garlic, smashed
  • 1/2 lemon, juiced
  • 1 tablespoon Expeller Pressed Coconut Oil
  • 1 tablespoon Himalayan salt
  • 1 teaspoon cumin powder, optional
  • 1/4 teaspoon cayenne pepper flakes, optional
  • 1 tablespoon olive oil, for garnish
  • fresh or dried parsley flakes, for garnish

Preheat oven to 400° F.

Prick eggplant skin with fork or cut a shallow slit along the side of the eggplant (to prevent eggplant from exploding). Place eggplant on a baking dish in middle or top rack in oven, and cook until eggplant shrivels and is soft and mushy and skin is somewhat charred, about 40-50 minutes.

Once eggplant has cooled to touch, peel skin and scoop insides into a bowl and mash (with a fork or potato masher).

Add tahini, garlic, lemon juice, coconut oil, salt, cumin, and cayenne pepper. Mix well.

Scoop Coconut Oil Baba Ghanouj dip into a serving bowl and drizzle with olive oil and garnish with parsley. Serve with warm flatbread or enjoy with freshly sliced vegetables, like cucumber, bell peppers, or carrots.

  • 1 cup basmati rice
  • 1 onion
  • 10 french beans
  • 1 carrot
  • 1 cup peas
  • 2 tablespoons fresh grated coconut  or dried shredded coconut
  • 1 green chili
  • 1 inch raw fresh ginger
  • 2 cloves garlic
  • 1 tablespoon coriander
  • 1 inch cinnamon
  • 3 cloves
  • 3 cardamom pods
  • 1/2 teaspoon cumin
  • 1 tablespoon coconut oil
  • 1 tablespoon ghee
  • 3 cups pure water
  • salt to taste

Wash the rice, drain the water and keep it aside.

Cut the vegetables into small pieces.

Grind coriander, coconut, green chili, garlic and ginger to a paste.

Melt coconut oil and ghee in a pan: add cardamom, clove, bay leaf, cumin and cinnamon. As it sizzles, add the onion and sauté for two minutes. Once the onion is translucent, add beans. After a minute, add carrot pieces, peas, and soaked rice then sauté.

Now add the ground paste to it. Sauté for two minutes. Add water and salt, stir. Close the lid and allow to cook until done. (You can also cook it in a pressure cooker for 10-15 minutes. Remove it once the pressure releases by itself.)

  • 1 head purple cabbage, finely sliced
  • 1 cup fresh lemon juice
  • 1/2 head cilantro (about 3/4 cup), chopped
  • 1 teaspoon ground cumin
  • 2 tablespoons apple cider vinegar with mother
  • 1/2 cup peanuts, chopped
  • 16 Medjool dates, chopped
  • 1/2 cup coconut oil, melted
  • 1 tablespoon honey, melted
  • salt to taste

In a large mixing bowl combine all ingredients, except coconut oil and honey, stir well.

In a small saucepan melt the coconut oil and honey. Pour over the salad and mix well.

Enjoy this as a light lunch or serve as a side with a larger meal. This tangy salad pairs well as a side to go with grilled meats.

  • 1 pound grass-fed ground beef
  • 1 egg
  • 3/4 cup mushrooms, finely chopped
  • 1 small onion, chopped finely
  • 1 clove garlic, minced or pressed through garlic press
  • small handful fresh basil, minced finely (about 1 tablespoon minced)
  • 1 teaspoon Himalayan salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne
  • 1 tablespoon coconut oil

Mix all ingredients together, except coconut oil. Form into meatballs.

Heat skillet and add coconut oil. Brown meatballs in coconut oil on medium-high heat.

Place browned meatballs in baking dish. Bake at 425° F for about 15 minutes, or until done.

Enjoy plain or serve with your favorite red sauce.

  • 1 tablespoon coconut oil
  • 3-4 medium sweet potatoes, peeled and spiral cut
  • 1 small red onion, sliced
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin

Heat the coconut oil in a large skillet. Add in sweet potato spirals, onion, and garlic. Add in all of the seasonings and stir well.

Cook over medium heat for about 15-20 minutes or until soft, tossing a few times during cooking.

Serve hot.

Preheat oven to 350 ° F.

Melt coconut oil and butter. Reserve two tablespoons of the melted butter/coconut oil.

Mix the rest of the oil mixture and all remaining ingredients with the shredded butternut squash. Form into patties and place on a baking sheet (makes about 16 patties).

Brush with reserved butter/coconut oil and bake in heated oven for 45 minutes – 1 hour.

In a large bowl, combine ground turkey, almond flour, coconut flour and egg. Mix until well blended and form into 1″ meatballs.

Place meatballs on a lightly oiled baking sheet. Bake at 375° F for about 20 minutes or until cooked through.

Meanwhile, heat coconut oil in a large skillet. Add garlic and onions and sauté until soft. Add in coconut milk, curry, salt and pepper. Cook over low-medium heat for about 10 minutes. Add meatballs to curry sauce and top with cilantro.
