If the coconut cream concentrate is solid, warm it by placing the jar in a pan of hot water. After 5 minutes, when the cream melts, stir it gently till it is uniformly smooth. Once creamy, measure 1/2 cup of coconut cream concentrate into a bowl. Add collagen peptide powder, honey, vanilla extract, coconut oil, and salt. Also add the cocoa powder, if using. Mix very well using a fork. When the mixture is uniform, shape into bite size balls and keep them in a baking tray or a plate. Refrigerate for 30 mins.

  • ½ cup raw organic sunflower seeds, finely chopped
  • 1 tablespoon organic chia seeds
  • 2 tablespoons virgin coconut oil
  • 1 circle organic cacao butter (or 1/2 teaspoon)
  • 2 teaspoons organic raw honey

Melt coconut oil and cacao butter together. Mix in sunflower seeds and chia seeds. Add raw honey.

Prepare a piece of parchment paper on a cookie sheet. Place mixture onto the parchment paper and spread evenly. Place in freezer until firm.

Remove from freezer. Break into bite-sized pieces.

Note: You can substitute desiccated coconut for the sunflower seeds, or flaxseed for chia seeds.

  • 1 1/2 cups coconut milk, chilled*
  • 1/2 cup pumpkin puree
  • 4 ounces coconut milk yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • Fruit, cookies, etc., for serving

In a blender, combine the chilled coconut milk, pumpkin puree, coconut milk yogurt, maple syrup and pumpkin pie spice. Blend until smooth.

If desired, cut the top off of a pie pumpkin and scoop out seeds. Pour dip into pumpkin shell. Refrigerate about 4 hours or overnight before serving. Serve with fruit or cookies.

Mix cacao powder and corn starch. Over medium heat, whisk in milk one cup at a time, and stir in maple syrup. Continue to stir, bringing mixture to a boil, then boil and stir for a minute.

Preheat oven to 350º F.

Lightly grease a mini muffin pan with coconut oil.

Add all the dry ingredients into a food processor and pulse a few times to incorporate them.

In a separate bowl mix together remaining wet ingredients. Pour slowly into food processor and pulse until everything is well combined.

Fill mini muffin pans and press mixture until it is well compacted and just below the top of the pan. Bake for 12-15 minutes, until lightly brown.
Cool before removing from the pan.
