  • 4 cups frozen cherries
  • 2 frozen bananas
  • 1/4 cup coconut milk*
  • 10 dates
  • 1 tablespoon cocoa powder

Put all ingredients in a high-powered blender, using the blender’s accelerator tool to press the ingredients into the blades, until ice cream consistency is reached.

  • 3 cups coconut milk*
  • 6 peaches, peeled and frozen, 3 of them diced
  • 1/2 cup raw honey
  • 2 teaspoons vanilla
  • pinch salt

Blend all ingredients except for the three diced peaches. Stir in three diced peaches. Pour into your ice cream maker, ice cream ball, or use any preferred ice cream making method.

In a mixing bowl, combine coconut milk, almond milk, sugar, almond butter and salt. Mix until well combined. Pour into ice cream maker and churn according to maker instructions.

Meanwhile, combine coconut oil, cocoa and honey and stir until smooth. When the ice cream is finishing churning, slowly pour in chocolate mixture. Remove from ice cream maker and scoop into bowls or cones.

  • 2 cups coconut milk*
  • 1 cup almond milk
  • 3/4 cup honey
  • 1/3 cup cocoa powder
  • 1 teaspoon sea salt
  • 1/2 cup marshmallows, chopped
  • 1/2 cup walnuts, chopped

In a mixing bowl, combine milks, honey, cocoa and salt. Blend until smooth. Pour into an ice cream machine and churn according to directions.

Once ice cream has finished churning, pour into a bowl and stir in marshmallows and walnuts. Scoop into serving bowls or cones and enjoy!

Blueberry Peach Filling:

  • 8 peaches, peeled and thinly sliced
  • 2 cups blueberries
  • 1 teaspoon ground ginger
  • 1/4 cup raw honey

Crisp:

Vanilla Ice Cream:

  • 2 cups coconut milk**
  • 1 cup almond milk, unsweetened
  • 1 teaspoon vanilla extract
  • 1/2 cup whole cane sugar
  • fresh vanilla bean, if desired

Filling:

Grease a slow cooker with coconut oil or palm shortening. Add peaches, blueberries, ginger, honey and cinnamon; toss until combined.

Crisp:

In a small bowl, combine almond flour, arrowroot starch, coconut flour, salt, honey and coconut oil or palm shortening.

Mix with a fork until blended and crumbly. Sprinkle crumb mixture over fruit. Cover and slow cook on low heat for 2-3 hours. Turn off and let mixture set up.

Coconut ice cream:

Whisk together coconut milk, almond milk, vanilla, sugar and vanilla bean until sugar is dissolved. Churn according to ice cream maker instructions.

*You can grind your own almond flour by placing whole almonds in a blender/food processor and blending until you get a fine meal.

  • 4 large bananas, frozen (broken into small pieces)
  • 1/4 cup fresh mint leaves
  • 1 avocado, peeled
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon cocoa powder
  • 1 teaspoon raw honey

In a small sauce pan, melt coconut oil and stir in cocoa powder and honey. Whisk until smooth.

In a blender, combine bananas, mint and avocado. Puree until smooth. Slowly pour chocolate sauce into banana mixture and pulse just a few times to get a “chip” like texture.

Serve immediately for soft serve consistency. Alternately, freeze the ice cream in a covered container for up to 2 hours to enjoy harder scoops (as pictured above in photo).

Coconut Ice Cream

  • 1 pint organic half n half or heavy cream
  • 1 can organic sweetened condensed milk*
  • 1/4 cup coconut cream concentrate
  • 1/4 teaspoon freshly grated nutmeg
  • 1 teaspoon pure almond extract
  • Raw honey (a tablespoon or so to taste – optional)
  • Ground-up nuts of choice (walnuts, etc.- optional)

Blend all ingredients together until smooth. Place mixture in your ice cream maker, following manufacturer instructions. Let run until it has reached the desired consistency.

You can also just use a very strong blender-just make sure the mixture is very cold so it will firm up when mixed (you can a few ice cubes to give it a push). Place the blended up mixture in a container and freeze it to firm up more. Enjoy!!
