Servings: about 12 cups
Preparation time: 10 minutes

  • 1 ripe banana
  • 3/4 cup unsweetened peanut butter (I prefer the fresh grind)
  • 2 tablespoons – 1/4 cup honey
  • 3/4 teaspoon vanilla extract
  • 2 1/4 teaspoon coconut oil, melted (refined for no taste, virgin for coconut taste)
  • 1/4 plus 1/8 teaspoon salt (omit if using jarred peanut butter with added salt)

1. Cut the banana into slices between 1/4 and 1/2 inch thick.

2. Mix all remaining ingredients in a separate bowl.

3. Place a bit of the peanut butter mixture to cover the bottom of each cup in a mini muffin tray.

4. Place a banana slice on top of the peanut butter.

5. With a spoon, scoop the peanut mixture unto each banana slice and cover completely.

6. Place in the freezer to set.

7. Store in the fridge or freezer.

Preparation Time: 20 minutes

1. In food processor, mix coconut flour and salt. Slowly pulse in coconut oil, cream cheese, sour cream, and sugar. Pulse until crumbly.

2. Shape dough into four disks, wrap well in (or place in zip lock bags) and refrigerate 2 hours to two days.

3. When ready to bake, preheat oven to 350 degrees. On a lightly floured surface, roll with a rolling pin, or shape with hands, each disk into a 9-inch round. Spread each round with two tablespoons of preserves, and top with a light dusting of coconut flakes. With knife or pizza cutter, cut each disk into 12 wedges. Roll up each wedge, starting with wide edge. Place each cookie on a greased cookie sheet, and sprinkle with additional coconut flakes.

4. Bake 15-20 minutes until lightly golden. Remove from oven and place each cookie on a rack to cool. Cookies store well, in airtight containers up to a week.

Gluten Free Roll Out Butter Cookies

Servings: 3-4 cookie trays worth Preparation Time: 20 minutes

Preheat oven to 325 degrees F.

In a food processor, process the eggs, honey, vanilla and almond extracts.

While running, add butter/coconut oil through the chute until combined.

Add flours, soda, and salt — processing until a loose dough ball forms. Small amounts of coconut flour may be added.

Divide dough into 3 parts and form into disks.

Wrap each disk in parchment paper and refrigerate for at least 30 minutes (or as long as 2 days).

Remove one disk from the fridge and layer between two pieces of parchment paper.

Using your fingers, press dough out flat. Use a rolling pin to finish rolling to 1/8″-1/4″ thickness. Cut out shapes with cookie cutters and place on parchment-lined cookie sheets.

Bake in preheated oven for 9-12 minutes, until browned and firm.

Gluten Free Coconut Flour Waffles

Preparation Time: 5 minutes

Preheat waffle iron on high heat. Grease iron well.

Mix all ingredients together until smooth. Spread about 1/2 cup batter evenly, covering all waffle parts.

Cook for 3 minutes.

These waffles freeze great!

Single Gluten Free Burger Bun

One of the biggest challenges about going gluten free is the breads. And if you love making your own hamburgers, finding a good gluten free bun to go with can be next to impossible at times, but not today.

This recipe will give you one moist, puffy, spongy, flavorful bun that will hold together and won’t taste like you just bit into crumbling cardboard. But the best part? It only takes a few minutes to make.

Single Gluten Free Burger Bun

Preparation Time: 10 minutes

Ingredients for one single bun:

Optional:

  • 1 teaspoon nutritional yeast
  • 1/4 teaspoon poppy seeds, chia seeds, sesame seeds

Preheat oven to 350 degrees F.

Add all ingredients and blend together using a hand blender or small food processor. Let the batter settle for a few minutes to thicken.

Split the mixture into two and spoon onto oiled parchment paper to make two 3-inch diameter pools of batter. Top with additional seeds if desired.

Bake in preheated oven for 10 minutes.

Use each piece as top and bottom of a burger bun.

While it is baking you can throw your burger on the grill. If you’re lucky the burger will be done by the time the bun is cooked!

Gluten Free Molten Lava Chocolate Cake

Preparation Time: 20 minutes

1. Preheat oven to 375F. Grease four 6oz ramekins with coconut oil. If you wish to serve these cakes on a plate, you will need to flour as well (use coconut flour, blanched almond flour, or cocoa powder).

2. Melt chocolate and coconut oil over low heat or a double boiler. Stir until smooth and let cool.

3. In a small bowl, beat eggs, vanilla, salt and sugar with a hand mixer until light and frothy, about five minutes (this can seem like an eternity with a hand mixer, but hang in there because it’s worth it!).

4. Pour egg mixture over chocolate. Sift cocoa and coconut flour over the top. Then gently fold all the ingredients together.

5. Pour batter into prepared ramekins (they should be filled to within 1/2″ of the top). Place the ramekins on a baking sheet and place in the oven (you can chill the ramekins for a few hours if you want to make them ahead of time, just make sure you bring them back to room temperature before baking). Bake for 11-12 minutes.

6. Remove from oven and serve immediately. Enjoy!

Preparation Time: 5 minutes

Preheat oven to 350 degrees. Lightly grease a glass baking dish.

In a medium bowl, cream sugar, salt, butter and vanilla extract together with an electric hand mixer. Add egg and mix thoroughly.

Sift in coconut flour and stir to combine. Let dough sit for one minute. Shape dough into 12 1-inch balls. Place evenly on baking dish and bake for 15 minutes, or until golden.

Let cool and roll in powdered sugar or cocoa powder
