Enjoy this sophisticated take on the kid friendly chicken strips meal by making it yourself with dried coconut, coconut oil and fresh berries. This healthy lunch or dinner recipe lets you choose your own ingredients to make it dairy free, wheat free, grain free and gluten free if you need to.
This healthy chicken soup entrée uses a medley of vegetables combined with chicken in a rich, creamy broth. Coconut flour and a generous helping of butter help to both thicken and flavor the soup, making it gluten free, and coconut oil and coconut milk provide creaminess and a light coconut flavor.
Throw all ingredients into the blender, and blend on high for 2 minutes. Pour into a zipper top bag with thawed chicken. Let marinate for at least an hour (24 hours is fab.) I would add a stalk of unchopped lemongrass here too, but I didn’t have any. Put it in the marinade, and discard after.
Melt coconut oil over medium heat in a large pan. Fry chicken lightly on both sides. While chicken is frying whisk all the remaining ingredients together. Pour over chicken. Place a lid on the pan and simmer the chicken for 30 minutes.
Boil chicken in a large stock pot full of water. When meat is done, pull out chicken and cool. Remove all meat from bones and skin. Return bones and skin to stock pot to make chicken stock. Use 1-2 cups of the meat, cut up, for chicken salad.
