Preparation Time: 30-45 minutes

Preheat oven to 350° F.

Grease a 9 inch cake pan with 1 teaspoon coconut oil. Add sliced apples, raisins, and pumpkin pie spice to pan. Bake in oven for 15 minutes while you prepare the batter.

In a large bowl mix the coconut flour, baking soda, hemp seeds, and salt. In a medium bowl whisk together eggs, milk, vinegar, and vanilla extract. Add wet ingredient to dry and combine well.

Pour batter into cake pan (over apples) and bake for 20-25 minutes or until a fork inserted in the middle comes out clean.

For best results, chill overnight and serve with organic maple syrup and homemade whipped cream.

  • 1 pound plain yogurt, preferably whole milk
  • 2 tablespoons honey
  • 1 1/2 teaspoons organic vanilla extract
  • 1 pound fresh strawberries, sliced
  • 1 cup shredded coconut, toasted (on low in a toaster oven)

Mix yogurt, honey, and vanilla. Divide the strawberries into four serving bowls. Cover each bowl of strawberries with 1/2 cup of the yogurt mixture. Top with 1/4 cup toasted coconut.

  • 4 slices uncured turkey bacon
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon coconut oil
  • 2 cups pineapple, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cinnamon

In a large skillet, cook turkey bacon on both sides for about 5-8 minutes each or until crispy and cooked through. Remove bacon from skillet and place on a plate lined with a paper towel to absorb any excess grease. Add diced potatoes to skillet with coconut oil. Saute about 15 minutes, stirring frequently. Add in pineapple, salt, pepper, chili powder, paprika and cinnamon. Break bacon into pieces and add to skillet. Saute for about 5-8 minutes or until potatoes are slightly crispy. Serve.

Make your mix ahead of time: add flour, sugar, baking powder, and salt to a quart sized bag. (Repeat several times until you have as many bags as you would like for your family.)
