Preheat the oven to 375 degrees ºF.

Place the warmed coconut butter into your blender along with the eggs, olive oil, salt, and garlic. Blend until the mixture is fairly smooth–it will be thick. The coconut butter solidifies if it comes into contact with cold, so make sure your eggs are at room temperature.

Cut a piece of parchment paper to fit a cookie sheet. Place the parchment on the cookie sheet and then lightly butter or oil the parchment paper. Spread the batter into a rectangle that is about 10 by 12 inches, of a fairly even thickness. Sprinkle the rosemary and other toppings over the batter.

Bake for 25-30 minutes, or until the edges of the focaccia are lightly browned. Remove and cool for a few minutes before cutting into squares to serve.

Mix all ingredients together until smooth. It helps to have everything room temperature.

Line an 8×8 pan with parchment paper and press dough into pan.

Tip: if you want to cut into bars do it now before you stick these in the freezer. Freeze for about 30 minutes. Then you can break this into serving sized pieces. Store in refrigerator. Enjoy!

Stir together the crust ingredients, incorporating everything well. It should stick together without being too oily or wet. Press firmly into an 8×8 baking dish.

Mix together the topping ingredients, using enough coconut cream to thoroughly moisten the coconut flakes and hold everything together. Spread evenly over the crust and then press down firmly into the crust.

Refrigerate for at least 1 hour, or until the coconut oil is solidified and you can cut squares without everything crumbling.

  • 4 cups homemade coconut/almond milk*
  • 2 tablespoons
    Coconut Cream Concentrate
  • 1/3 cup pineapple, fresh or frozen
  • 1 ripe banana, fresh or frozen
  • 1 handful ice, or as needed

Blend all of the ingredients together.

Serve with a slice of lime and a fancy rim with shredded coconut.

Dip the rip into a plateful of honey and then dip it into a separate plateful of shredded coconut. Enjoy.

Coconut Cream Lilikoi Butter

Servings: 1.5 cups
Preparation Time: 60-70 minutes

Simmer the lilikoi in a small saucepan at the lowest heat setting until it is reduced by one-third to one-half (about 45-60 minutes). Turn off the burner.

Stir in the coconut cream concentrate until dissolved. If the CCC is solidified, dip a metal 1/4 cup measure into hot water and then scoop. Add raw honey and mix.

Pour into sterilized half-pint jars. Refrigerate one jar to eat right away. Can the rest for later using the water bath method or freeze it.

Best served at room temperature as the coconut cream will solidify in the fridge.

  • 3/4 cup
    coconut cream concentrate, softened*
  • 1/4 cup cashew butter (I prefer fresh grind, jarred has added oils)
  • 2/3 – 3/4 cup granulated sugar
  • 1 egg
  • 1/4 cup FRESH lemon juice, strained (about 1 lemon)
  • 1 tablespoon grated lemon peel
  • 1 teaspoon baking powder (gluten and corn free)
  • dash of sea
    salt

Preheat oven to 350 degrees ºF.

Place the softened coconut cream in a food processor and pulse until smooth.

Add in the remaining ingredients and process until combined and lemon peel has disappeared.

Depending on how soft your coconut cream was, you may need to place the dough in the refrigerator for a few minutes to harden.

Once dough is hard enough, roll it into about one inch balls. Place the balls on a parchment lined cookie sheet and slightly press down. The cookies will spread slightly.

Bake in preheated oven about 10-12 minutes or until slightly brown around edges.

Let the cookies cool for a few minutes to help them set up then transfer to a cooling rack.

Store in an airtight container and refrigerate if you prefer a harder cookie.

Notes:

*To soften the coconut butter, place the open jar in a saucepan of simmering water. Most have a thick layer of coconut oil on the top, remove that to use for something else. You want to use all butter in this recipe or the oil will cause these to spread too much!!

  • 1 cup coconut cream concentrate
  • 2-3 tablespoons raw honey
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon orange, lemon, grapefruit or other citrus zest
  • 1 teaspoon orange, lemon, grapefruit or other citrus extract (if using oil, use a few drops)

1. In a food processor, pulse coconut cream concentrate and honey until combined. Then, with the processor running, add the coconut oil in a steady stream. Add zest and extract or oil, and mix until combined.

2. On a cookie sheet lined with parchment paper or wax paper, spoon mixture and form into a rectangle. Press with your hands to make the thickness even, about 1/4 inch thick. Chill for 30 minutes in the refrigerator.

3. Remove from the fridge, and lift parchment or wax paper off the cookie sheet and transfer to a cutting board. Cut into little squares or whatever bites you like.

4. You can store these in the fridge, or even on the counter in an airtight container. The coconut cream concentrate keeps its shape well, even at room temperature.

Coconut Cream Chocolate Latte

Place milk, coconut cream concentrate and vanilla in a small saucepan or milk frothing pitcher. Heat milk until scalding or almost scalding (do not simmer or boil!).

While milk is heating combine espresso and chocolate chips. Whisk to blend.

Remove milk from heat and froth with a milk frother or whisk until milk is nice and frothy. Pour over the espresso and give the drink a quick buzz with a milk frother stick or stir with a small spoon gently to blend.

*If desired omit coconut cream concentrate and use part homemade coconut milk* for the whole milk.
