Combine dry ingredients and mix well. Add coconut oil and agave syrup and stir to combine. Mold into small balls by using a spoon, ice cream scoop, or your hands.

Freeze for minimum 30 minutes and enjoy. These are best when frozen or refrigerated.

Combine flours and salt in a large bowl. Mix in the coconut oil until well blended. Gradually stir in the water to make soft dough.

Divide the dough into 30 equal golf-ball sized balls. Roll out each ball into a thin circle on a floured surface. Cook each tortilla on a hot cast-iron griddle for 30 seconds per side. You should have pale brown spots when done. Use immediately or store in a plastic bag in the refrigerator. May freeze for long-term storage.

Preheat oven to 350 degrees.

Combine all dry ingredients together in a large bowl. Add all remaining ingredients and stir until well combined. Pour into un-greased 9×13 inch baking pan and bake for 50 minutes or until tester inserted in center of cake comes out clean. Cool.

Optional Icings:

Cream Cheese Icing

Cream everything together until well blended and thicken with a few tablespoons of coconut flour.

Coconut Cream Icing

Beat all ingredients together and drizzle over cake. Icing will separate if left to sit for long, but can just be re-stirred.

Golden Raisin Icing

  • 1 cup chopped golden raisins
  • ½ cup chopped dates, soaked with raisins for 1 hour in orange juice, drained
  • ½ cup chopped pecans
  • ½ cup honey

Beat all ingredients together and spread over warm cake and serve. REALLY GOOD!

Crispy Coconut Granola

Dry ingredients:

Wet ingredients:

Mix together the dry ingredients in a large bowl and set aside. Melt coconut oil. Add rice syrup and vanilla extract to the coconut oil. Pour mixture over the dry ingredients and gently mix the wet ingredients into the dry. It will take a while until it is well distributed.

If you like moist granola you can eat it at this stage. If you like it dry it can be baked at 300 degrees for 15 – 30 minutes. Set the timer to stir and check it every 10 minutes. Add the dried fruit after it has baked.

If you like sweeter granola, replace some of the rice syrup with honey.

  • 2 apples- diced
  • 1 stalk celery – finely chopped
  • 1 can crushed pineapple-drain most of juice off
  • ½ cup flaked coconut
  • ½ cup plain yogurt
  • ¼ cup coconut cream concentrate
  • ½ cup walnut or pecan pieces
  • 2 tablespoons honey – optional

Fold all ingredients together in a large bowl. Serve cold.

Rosemary Muffins

  • 2 ¼ cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 teaspoons fresh rosemary, chopped
  • ¾ teaspoon salt
  • ½ cup + 1 tablespoon coconut oil, solid
  • ¾ cup buttermilk
  • ¼ cup melted butter

Preheat oven to 400 degrees. Grease muffin tins with extra coconut oil.

In large bowl, combine first 5 ingredients. Cut in solid coconut oil until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Mixture will be dry and crumbly.

Fill greased muffin tins 2/3 full and brush tops with melted butter. Bake for 10-13 minutes or until lightly browned.

Coconut Fried Chicken

Coating mix:

Wash chicken thighs and pat dry with paper towels. In a large bowl, mix all the dry ingredients together.

Beat yogurt and egg together. Coat chicken thighs in egg/yogurt mixture and coat with bread crumb mixture.

Heat the coconut oil in a large skillet and fry chicken until golden on both sides, takes about 15 minutes to cook fully. Drain on paper towels and serve immediately.

Preheat oven to 425 degrees.

Beat oil, sugar and egg together and stir in bananas. Add flour, baking soda and walnuts and stir until combined. Pour/spoon into muffin tins and bake for 16 minutes or until tester inserted in center of muffin comes out clean.
