If you love chewy, coconutty cookies then this recipe is for you. Crisp on the outside and wonderfully chewy throughout, this cookie is a total crowd pleaser.

Servings: approximately 30 cookies
Preparation time: 15 minutes

Preheat oven to 350 degrees F. Grease cookie sheets lightly with coconut oil.

Combine the flour and baking soda together in a small bowl; mix well and set aside.

Cream the butter and sugars together with an electric mixer. Beat in vanilla extract and/or coconut extract and egg until light and fluffy.

Add the flour mixture to the butter mix and when it is almost fully incorporated add the flaked coconut (dough will not form a stiff “typical” cookie dough, it will be sticky and the color of butterscotch).

Drop dough (measuring tablespoon size) unto prepared cookie sheets and bake for 8-10 minutes. Cookies should be lightly browned.

Cool for a few minutes on cookie sheets before removing to wire rack to cool completely.

Servings: 6

Preheat the oven to 350 degrees.

Blend all ingredients except cheese in a food processor (or whisk by hand) until there are no lumps. If the batter is a little dry just add a tablespoon of water as needed. It should be a pretty moist, almost pourable batter. Stir in cheese. Pour into greased bread pan.

Bake in preheated oven for 40 minutes or until done (toothpick inserted in center comes out clean).

Coconut Oil Sandwich Buns

I make these in a bread machine set on the “dough” setting. They could easily be kneaded by hand, set to rise, punched down and rolled out, then cut.

Servings: 8-10
90 minutes preparation

1. If using bread machine, put ingredients (except for last 1 tablespoon coconut oil) into machine in the order listed. Select “Dough” setting.

2. When finished, turn out onto a floured board and roll out to 1/2″ – 3/4″ thickness. Cut into 3″ circles (I use a floured large mouth canning jar ring).

3. Place on lightly greased (coconut oil) baking sheet. Brush tops with the remaining 1T coconut oil. Cover and let rise about an hour in a warm, draft free place until doubled.

4. Bake at 350 degrees F for 10-15 minutes, until golden brown. Yield, 8-10 buns.

To make by hand: Mix all ingredients together in a large bowl until a dough forms. Turn out unto a lightly floured work surface and knead until smooth and elastic. Form dough into a ball and place into a lightly oiled bowl, turning once to coat. Cover bowl with a damp towel and place in a warm, draft free place and let rise until doubled (30 minutes to 1 hour). Proceed as recipe states from step 2.

Savory Cheese Scones with Coconut Flour

Scones are such a delicious treat for breakfast or lunch…or dinner. It’s more of a breakfast pastry though, and can be either sweet or savory. I have a savory recipe for you today.

The key to keeping these scones fluffy, tender and moist is in minimal handling of the dough. Cut the very cold butter in just until it is in pea size-ish clumps, not until the flour looks like crumbs. Work the dough just until the excess flour is incorporated, adding a bit of milk if needed.

My scones are never dry. These scones are moist, tender, fluffy, and sooo cheesy! They’re delicious! The not-so-secret ingredient in this recipe is the sour cream. It keeps the scone just as described.

I’ve added coconut flour for extra flavor and fiber. You can use whole wheat pastry flour in place of the all purpose flour if you like. The best results I’ve had were when I used one cup of the whole wheat and a half cup of the all purpose. But it’s totally up to you: give or take. Just keep in mind that when you use whole wheat flour, you’ll have to increase the amount of milk, as it’s a pretty thirsty flour.

Oh, and a tip for getting the butter really cold? Stick it in the freezer for a few minutes. Do that first thing, even before you preheat the oven. By the time you’ve preheated the oven, assembled your ingredients, and whisked the dry stuff together, it’ll be perfectly cold.

Humm….am I making this sound complicated? Seriously, it’s not! Scones are actually pretty easy to make – like baking powder biscuits. Baking powder biscuits are easy to make, right?

  • 1 1/2 cups all-purpose flour*
  • 1/4 cup coconut flour
  • 1 tablespoon sugar
  • 4 1/2 teaspoons baking powder
  • 5 tablespoons salted butter, very cold
  • 5-6 ounces cheese, cut into tiny cubes
  • 1/2 cup plus 2 tablespoons milk
  • 1/3 cup sour cream
  • 1 egg
  • 1-2 tablespoons milk or water

Preheat the oven to 400 degrees F.

Whisk the flours, sugar, and baking powder in a medium sized bowl.

Cut butter in using a pastry blender or your hands just until it is in pea sized clumps (or a bit bigger, just don’t over-do it). Stir in the cheese cubes.

Mix the milk and sour cream together and pour into the dry ingredients all at once. Stir gently until blended. Add a bit more milk if needed. (You can knead the dough on a work surface instead of stirring in the bowl if desired. Either way, keep the handling of the dough to a minimum. Overworking the dough = yuck!)

Dump the dough unto a work surface while there is still a little un-absorbed flour left. Pat into a fat circle, flip over, and pat the circle out to 3/4-1/2 inch thickness. Cut into 8 wedges.

Arrange scones in a circle on an ungreased jelly roll pan, placing them fairly close together. Beat egg and milk/water together and brush over the scones. Let rest for 5-10 minutes.

Bake scones for 15-20 minutes, or until the tops and bottoms are a light golden brown. Enjoy while hot!

*You may use half or all whole wheat pastry flour for the all purpose. Add more milk as needed.

Coconut Vanilla Granola

This granola has a long shelf life, although it’s usually eaten up very quickly. In addition to eating as cereal, try it sprinkled on top of vanilla ice cream or over yogurt.

Servings: 10 cups
Preparation time: 10 minutes

Preheat oven to 250 degrees F.

Combine oats, nuts and coconut in a large bowl. Set aside.

Combine honey, water and salt in a small saucepan. Heat, stirring frequently, to thin the honey. Remove from heat and stir in coconut oil and vanilla. Pour over oat mixture and stir well.

Place granola into 2 greased 13x9x2-inch pans or 1-2 greased cookie sheets. Bake in a preheated oven for about one hour, until golden. Stir/turn over using a wide metal spatula about every 20 minutes. The granola will get crunchier as it cools. Store in an airtight container.

Preparation time: 15 minutes

Preheat oven to 375 degrees F.

Beat butter and sugars until light and fluffy with an electric mixer fitted with paddle attachment. Slowly add oil and mix until oil is well incorporated. Beat vanilla extract and egg in until well incorporated.

Mix flour and baking soda together and stir into butter mixture just until combined. Combine remaining ingredients and add to dough, mixing just until incorporated.

Using a small cookie scoop drop tablespoonful sized cookie dough balls onto an ungreased cookie sheet spacing about 1 inch apart (they won’t spread much). Bake in preheated oven for 7-12 minutes, just until lightly browned.

You can also freeze individual balls of cookie dough and freeze for later baking. To bake simply place frozen cookie dough onto sheet (there’s no need to defrost) and bake as directed (adding a few minutes to cook time).

Soft Pretzels

Servings: 10 large pretzels
Preparation Time: 1 hour

  • 1 1/2 cups very warm water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 (.25 oz) package active dry yeast
  • 22 ounces flour, about 4 1/2 cups (use about half whole wheat flour)
  • 2 ounces coconut oil, melted (about 1/4 cup)
  • 2 quarts water
  • 1/2 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water, optional
  • salt

Pour water into the bowl of a standing mixer and stir in sugar and salt until dissolved. Sprinkle the yeast on top but do not stir. Allow to proof for 5-10 minutes, until the yeast begins to foam.

Add the flour and coconut oil to the yeast mixture. Using the dough hook attachment, mix on low speed until well combined. Turn the speed up and knead until the dough is smooth and pulls away from the sides of the bowl, around 4 to 5 minutes.

Remove dough from the bowl. Oil the bowl with coconut oil and place ball of dough back in. Lightly grease the top of the dough ball. Cover the top of the bowl with a damp towel and let sit in a warm place for approximately 1-2 hours or until the dough has doubled in size.

Preheat the oven to 450 degrees F. Stir the water and baking soda together and bring to a boil in a large pot.

Turn the dough out onto a work surface lightly oiled with extra coconut oil and divide into 10 equal pieces. Roll out into pretzel shapes and place on cookie sheets lined with parchment paper and greased with coconut oil.

Place 1 pretzel at a time into the boiling water for 30 seconds. Remove with a large, flat spatula and place back unto lined cookie sheets. Brush with optional egg wash if desired.

Bake until dark golden brown in color, 12 to 14 minutes. Transfer to a cooling rack and serve with melted butter, salt, cinnamon sugar and other toppings/dips of choice.
