Add hazelnut meal to food processor and process until fine.

Melt chocolate chips, coconut oil, and almond milk in a pan on the stove; make sure the milk is not too warm and then add this mixture to the food processor. Add all other ingredients and blend until very smooth.

Pour batter into a 9″ pie pan and bake at 375° F – until a toothpick inserted in the middle comes out clean (approx 15-20 minutes). Let cool, remove from pan, top with whipped cream, if desired.

Preheat a large cast iron skillet over medium-high, add coconut oil. Fry patties according to desired doneness, flipping once halfway through.

Preheat oven to 350° F.

Melt coconut oil in a medium sized pan over high heat. Sear roast on all sides. Remove roast and place in large oven safe crock along with potatoes and carrots.

Add onions to the pan and reduce heat to medium, cooking until softened and golden, 5 to 7 minutes. Add pressed garlic, Italian seasoning, sea salt, black pepper, and cayenne pepper, cook for 1 minute.

Pour broth and 2 teaspoons coconut cream concentrate in pan and stir, scraping the bottom to deglaze.

Add contents of pan to crock with roast. Place in oven and cook covered for approximately 2 1/2 hours, until fork tender.

Preheat oven to 350° F.

Cook rice.

Slice squash in halves, scoop out seeds, and place in a large baking dish.

In a large pan on medium-high heat melt the coconut oil and coconut cream concentrate. Add onion and cook until translucent. Add garlic, Italian seasoning, salt, cayenne, celery, and ground beef. Cook until well browned. Turn off heat and mix in cooked rice.

Stuff squash halves with ground beef mixture, cover dish with foil, and bake until squash pierce easily with a fork (baking time will vary depending on squash size) approximately 30 minutes.

Icing: 

Preheat oven to 325° F

In a large bowl combine all dry ingredients except chocolate chips.

In a double boiler over medium heat, combine chocolate chips, coconut oil, and vanilla extract. Stir constantly until melted. Remove from heat and add peppermint oil.

Whisk eggs into wet ingredients then combine with dry ingredients and mix well.

Drop by rounded tablespoons 2 inches apart onto a greased cookie sheet. Bake until edges begin to crisp, about 12- 15 minutes. Remove from oven and allow to cool while you prepare the icing.

Add all icing ingredients in a small bowl and whisk until combined. Spread icing over cooled cookies.

Then add chopped kale and cook until kale is softened, about 5 minutes.

  • 1 cup coconut milk*
  • 1 teaspoon chia seeds or hemp seeds
  • 1 teaspoon goji berries or dried cranberries
  • 1/4 cup frozen orange concentrate or 1 small peeled orange or tangerine, deseeded
  • 1/4 cup frozen mango or pineapple chunks
  • 1/2 teaspoon organic turmeric powder or one inch piece of turmeric root, peeled
  • 1/4 teaspoon ginger or sliver of peeled fresh ginger
  • 1/4 teaspoon cinnamon, optional
  • 1 tablespoon coconut oil or Coconut Cream Concentrate
  • 1 tablespoon organic honey or maple syrup
  • 4 ice cubes

Add coconut milk, chia seeds, and dried fruit to blender and let sit for a few minutes while you prepare the other ingredients to allow them to plump up and puree more easily.

Add remaining ingredients to the blender and process until smooth.

Serve and enjoy!

In a heavy saucepan, heat the carrots, coconut milk, honey, and vanilla until the mixture comes to a low bubble. Reduce heat to medium and cook, stirring frequently, until the carrots are tender.

Stir in cardamom, salt, and coconut cream concentrate and continue cooking until the mixture is thick and most of the liquid is absorbed. Remove from heat and stir in the raisins and cashews. Serve warm.
