  • 2 tablespoons chia seeds, soaked in ½ cup water for 15 minutes
  • 1 cup ice cubes
  • 1 cup coconut milk*
  • 1 cup plain Greek yogurt, or kefir
  • 1-2 tablespoons raw honey
  • 1-2 tablespoons coconut cream concentrate
  • 1 or 2 frozen bananas
  • 1 cup frozen aronia berries, or blueberries
  • water, as needed
  • scoop of ice cream or dollop whipped cream, optional

Soak chia seeds in water for 15 minutes.

Put all ingredients into blender. Blend until smooth, adding water as necessary.

Top with ice cream or whipped cream, if desired.

Almond Butter Buckeyes

Preparation Time: 25 minutes

Place coconut cream concentrate, almond butter, 1/4 cup coconut oil, salt, vanilla, and honey in a small saucepan and heat over low heat, stirring constantly, until melted and smooth.

Refrigerate  for 20 minutes, or until it is firm. Shape the filling into approximately 20 balls. Place the formed filling back into the refrigerator to firm up completely.

Heat the dark chocolate and remaining coconut oil over a double boiler on low heat, stirring until melted and smooth.

Insert a toothpick into each ball and partially dip into the chocolate. Place on waxed paper or aluminum foil. After all of the candies are dipped, refrigerate until completely firm.

Note: The flavor and texture of these is best served at room temperature, but if you are transporting these or giving them as a gift they will hold up better if chilled.

  • 1 whole peach, large
  • 1 cup coconut milk* or other dairy free milk
  • 1/4 cup frozen fruit of your choice
  • 1 tablespoon coconut cream concentrate
  • 2 tablespoons fresh ground nuts
  • 1 tablespoon dried coconut flakes
  • 1 tablespoon honey
  • 4 ice cubes

Wash and peel peach, cut into quarters. Place peach and all remaining ingredients into blender and puree until smooth. Enjoy!

  • 2 cups strawberries, quartered
  • 2 cups nuts, such as walnuts or almonds
  • 1 cup dates, pitted
  • 1 tablespoon coconut oil
  • 1/2 teaspoon sea salt

Filling:

Preheat oven to 375 °F.

Place strawberry pieces on a baking sheet lined with parchment paper. Bake for about 15 minutes. Remove from oven and puree until smooth.

Meanwhile, in a food processor or blender, combine nuts, dates, coconut oil and salt for crust. Pulse until smooth. Spread into bottom of a 9″ spring form pan (or pie pan) and press flat.

Filling:

In a blender, combine soaked cashews, sour cream, maple syrup, coconut cream concentrate, and vanilla. Blend on high speed for at least 2 minutes or until completely smooth. Pour mixture into prepared crust.

Place dollops of strawberry puree on top of filling. Using a spoon or knife, carefully swirl the berry mix into the filling.

Place pan in refrigerator to chill for at least 2 hours or until ready to serve. Drizzle with a little melted chocolate if desired. Store in refrigerator.

In the hot water add the coconut cream concentrate and sugar, stir well. This will make a thick sweetened coconut milk. Set aside.

In a wide pan on low heat, melt 1/2 tbsp coconut oil and add grated carrots. Saute on medium heat for 5 minutes until carrots are little soft and turn a bit dry. Now, add the 1/3 cup shredded coconut. Toast for a minute.

Combine with the sweetened coconut milk and stir until well incorporated. Cook until the mixture gets thick and starts to roll like a ball, 5-8 mins. Turn off heat.

When the mixture is warm, add cardamom powder and mix well.

Take some mixture in your hand and shape into a ball and roll it in the shredded coconut. Can be stored in an airtight container for 4-5 days.

Preheat the oven to 350 degrees. Oil the bottom and sides of an 8 x 8 inch baking pan.

In a small mixing bowl, stir together the almond flour, cocoa, and salt. Stir in the vanilla, coconut oil, and maple syrup. Use your hands to press the mixture evenly over the bottom of the oiled baking dish. Bake the crust for 15 minutes. Let it cool completely before spreading on the filling.

Place the blueberries, coconut cream concentrate, vanilla, and maple syrup in a food processor or blender. Blend until fairly smooth, with some pieces of blueberry still visible. Spread the filling over the cooled crust and refrigerate for at least 30 minutes before pouring on the glaze.

To make the chocolate glaze, stir together the coconut oil, cocoa powder, and maple syrup until smooth. Pour the glaze over the blueberry filling, tilting the pan to get it evenly over the top. Refrigerate the bars for at least two hours before cutting into squares to serve.

*You can grind your own almond flour by placing whole almonds in a blender/food processor and blending until you get a fine meal.

Soak dates for about 30 minutes in 1/2 cup of water until they soften. Add dates, with the water they soaked in, into blender with the remaining ingredients and blend until smooth and creamy.

Can be spooned into cups and enjoyed as pudding at this stage, or if you want to make them into coconut Fudgesicles, spoon mixture into your popsicle molds.

Freeze overnight.
