Crumb Layer:

Creamy Layer:

Gelatin:

  • 4 cups 100% fruit juice, of your choice
  • 3 tablespoons grass-fed gelatin
  • 1 cup fruit (optional)

For the Crumb Layer:  Preheat oven to 400 degrees ºF. Place walnuts in a blender or food processor. Grind until walnuts resemble a coarse meal. Add the honey, coconut oil, and salt. Mix. Finally, add the coconut flakes and mix until combined. Press into 8×8 inch, glass pan. Bake for 8-10 minutes or until slightly brown on top. Let cool. Place in the freezer to chill.

For the Creamy Layer:  Place 1 cup coconut cream in a small sauce pan over medium heat. Heat until considerably hot, but not boiling. Remove from heat and sprinkle the gelatin over the top and whisk until dissolved. In vita-mix combine warm coconut cream with the remaining cream, honey and vanilla. Blend. Cool to room temp.

For the Gelatin:  In mixing bowl pour 1 cup of juice and sprinkle with the gelatin. Let sit. Heat 3 cups juice until almost boiling. Combine the hot juice with the gelatin mixture and whisk until dissolved. Cool to room temp.

To assemble:
Remove crumb layer from the freezer and spread on the creamy layer. Place in the refrigerator. When gelatin is room temp. and the creamy layer has chilled and set, pour the gelatin on top. Chill until gelatin has set.

Grease a small container (mine measured 7″ x 5″) and place a piece of parchment paper in the bottom, leaving enough on the edges for a handle.

If your coconut cream concentrate is not easy to stir, warm over low heat.

Mix all ingredients together and place in the container. Add honey to your taste preference.

The mixture will be quite thick. Use the back of a spoon to flatten the mixture into the container.

Place in freezer for 15-30 minutes or refrigerate for several hours. Keep chilled or frozen as it will melt at warmer room temperatures. This mixture could also be used as frosting.

Preparation Time: 10 minutes

Preheat your oven to 350 ºF. Line your baking sheet with parchment paper.

Add the pumpkin puree, eggs, sugar, coconut oil and vanilla into a mixing bowl and cream together until well combined.

In another bowl, combine the remaining dry ingredients and slowly mix into the wet ingredients.

Using a 1/3 of a cup scoop, scoop out batter and flatten a little on the baking sheet.

Bake at 350 for 15-18 minutes, until firm to the touch.

Remove from oven and let cool a little before topping with your glaze of choice.

Filling Ingredients:

  • 2 cups cranberries
  • 1/2 cup water
  • 1/4 cup raw honey
  • 1 apple, peeled and thinly sliced
  • 1 cup pineapple, diced
  • 1 teaspoon cinnamon
  • 1/4 cup arrowroot starch

Preheat oven to 350 degrees ºF.

In a mixing bowl, combine almond flour, coconut flour, 2/3 cup arrowroot starch, salt and baking powder. Cut in shortening, vinegar and 1 tablespoon honey until mixture is crumbly. Slowly add in a little water while mixing until dough forms.

Roll out dough on a lightly floured surface until about 1/4″ thick. Place dough in a deep dish pie plate. Save any remaining dough to make a lattice top crust if desired.

In a saucepan, bring cranberries, 1/2 cup water and 1/4 cup raw honey to a boil. Simmer about 10 minutes until cranberries have popped and most of water is absorbed. In a large bowl, combine cranberry mixture, pineapple, apple, cinnamon and 1/4 cup arrowroot starch. Pour into pie crust. Top with lattice crust or a whole crust top if desired.

Bake for about 40-50 minutes or until crust starts to brown.

Mixture for sprinkling:

  • 1 teaspoon cinnamon
  • 2 tablespoons sugar

Preheat oven to 350 degrees ºF.

Stir the butter/coconut oil, honey, egg, and vanilla until uniform. (Mixing this recipe by hand works fine.)

In a separate bowl, mix the nut flour, tapioca flour, coconut flour, baking soda, cinnamon, and salt.

Add dry ingredients into the wet. Allow to sit a few minutes to thicken.

Use a cookie scoop to place balls of dough on a cookie sheet lined with parchment paper. Flatten a little with a buttered spatula.

Sprinkle tops with cinnamon and sugar mixture.

Bake approximately 12 minutes, until slightly golden. Cool a few minutes on the cookie sheet before moving them to a rack.

Keep in an air-tight container in the fridge.

Preheat oven to 375 degrees ºF.

In a bowl, combine shortening, vanilla extract, almond extract and honey. Cream together until smooth.

Add in flours, starch, salt and pecans until dough forms. Wrap dough ball in plastic wrap and refrigerate for about an hour. Form into boomerangs and place on a greased or lined baking sheet.

Bake in preheated oven for about 15 minutes or until edges start to brown. Let cool completely. Dust in powdered sugar if desired. Store in a sealed container.

Crust:

  • 1 cup plain almonds
  • 1/2 cup water
  • 1 cup dates (10 regular dates, pits removed)
  • 1/2 cup coconut flour
  • 1/4 cup sugar

Fruit Filling:

  • 2 medium persimmons, chopped (about 1/2-3/4 cup)
  • 1/2 cup chopped cranberries
  • 1/3 cup dried currants or raisins
  • 1/4 cup water
  • 1/2 cup sugar

Crumb Topping:

Preheat oven to 375 °F.

Crust: in a blender, puree almonds, water and dates together until smooth. In a bowl, add in date mixture and remaining crust ingredients and mix until well combined. Spread into a greased 9×13 baking pan. Bake for about 15 minutes or until lightly browned.

Filling: in a saucepan, combine fruit filling and bring to boil over medium heat. Cook for about 10 minutes or until mixture starts to thicken. Pour fruit mixture over crust.

Topping: in a small bowl, combine topping ingredients and blend together with a fork until crumbly. Sprinkle crumb mixture over fruit filling. Return bars to oven and bake for an additional 10 minutes or until crumb topping starts to brown. Let cool about 15 minutes and cut into bars.

  • 1/2 cup melted coconut oil, ghee or butter
  • 1/2 cup almond butter (or another natural nut butter)
  • 1/2 cup honey
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup almond flour or cashew meal
  • 1/2 cup coconut flour
  • 3/4 cup ground pecans
  • 1 teaspoon real sea salt
  • 1 teaspoon baking powder (aluminum free)
  • 3/4 cup dark chocolate chips
  • pecan halves (optional)

1. Preheat oven to 350 ºF.

2. Combine coconut oil, almond butter, honey, vanilla, and egg in a medium bowl. Mix well. By hand works fine.

3. In a separate small bowl, combine almond flour, coconut flour, ground pecans, salt, and baking powder. Add to wet ingredients and stir to combine. Add chocolate chips and stir again. Allow the batter to sit for 5 minutes to thicken.

4. Scoop dough and place on greased cookie sheet, parchment paper, or use a silpat. Flatten the cookies with the back of a buttered spatula. If you have any pecan halves, press one on the top of each cookie. Oooh, la, la!

5. Bake for 12-14 minutes, or until browned around the edges.

6. Let cool on the baking sheet for a few minutes before removing to a cooling rack.

Makes approximately 2 dozen cookies. Store in fridge or freezer.
