Iced Coconut Pumpkin Latté

For the whipped cream:

Whisk all ingredients except the pumpkin, coconut cream concentrate and coffee together in a large bowl until thoroughly mixed. Add the pumpkin puree and coconut cream concentrate, blend until smooth with a stick blender (or in your regular blender). Pour into ice cube trays. Freeze until firm or overnight.

Once your pumpkin cubes have frozen, place 10-12 cubes in a blender and pour 1 cup of chilled coffee over the cubes. Blend just until all the big chunks are gone. The length of time you blend will determine the consistency of your drink.

Pour into a cup and top with some delicious homemade coconut whipped cream (directions below), and some cinnamon and flaked coconut for a garnish!

For the whipped cream:

Pour the cream into a glass bowl and whip with a hand mixer until the cream begins to thicken. Add the maple syrup and then whip until stiff peaks form. Add the vanilla extract and the shredded coconut and mix until just combined.

  • 4 cups homemade coconut/almond milk*
  • 2 tablespoons
    Coconut Cream Concentrate
  • 1/3 cup pineapple, fresh or frozen
  • 1 ripe banana, fresh or frozen
  • 1 handful ice, or as needed

Blend all of the ingredients together.

Serve with a slice of lime and a fancy rim with shredded coconut.

Dip the rip into a plateful of honey and then dip it into a separate plateful of shredded coconut. Enjoy.

A nourishing and delicious tropical treat, perfect for chasing away the winter blues and giving you plenty of energy to follow through on those New Years goals! đŸ˜‰

Preparation Time: 5 minutes

  • 1 1/2 cups coconut milk*, plain kefir or grass-fed milk
  • 4 soy-free egg yolks (optional, but adds lots of sustaining nutrition and energy)
  • 1 tablespoon virgin coconut oil, melted
  • 2 tablespoons coconut flakes
  • 1 tablespoon whole sugar (+/- to taste – this is what gives the delicious, caramelized flavor)
  • 3/4 cup frozen peaches
  • 1/2 cup frozen pineapple
  • 1 teaspoon vanilla extract
  • dash salt

Blend all ingredients thoroughly until smooth. If desired, stir in a small amount more whole sugar to each serving for a delicious caramely crunch. Enjoy! đŸ™‚

Coconut Eggnog

Preparation Time: 10-15 Minutes

Gently heat coconut milk over low-medium heat. Stir in egg yolks. Continue to stir until the milk becomes thick. Add vanilla extract and maple syrup. Taste coconut eggnog and add more maple syrup if you desire.

Refrigerate for two hours before serving. Pour into individual cups and sprinkle with cinnamon.

  • 1 frozen banana (it doesn’t need to be frozen, but they are the best!)
  • 1/4 cup pineapple chunks
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • pinch of salt
  • dried coconut flakes

Recipe: Combine all ingredients except dried coconut in a blender and puree until smooth. Garnish with coconut if desired.
