Mix all ingredients in a large bowl and then shape into equal sized patties.

Preheat a large cast iron skillet over medium-high, add coconut oil. Fry patties according to desired doneness, flipping once halfway through.

Top with grass-fed cheese. Serve with or without a bun.

Beat the egg whites and the cream of tartar with a mixer on high speed until soft peaks form.

Place the maple syrup and salt in a saucepan and bring to a boil over high heat. Continue boiling until mixture reaches 240 °F (soft ball stage) to form a syrup. When the syrup reaches 240 °F, slowly start to drizzle the syrup into the beaten egg whites to warm them. Gradually add the remainder of the syrup to the egg whites, while continuing to beat the mixture on medium high for about 7 minutes. Add the vanilla and mix until cream is stiff and glossy, another 1 or 2 minutes.

This mixture makes several cups of marshmallow cream. It will last several days in the refrigerator.

S’mores Coffee:

Warm the coconut milk in a small saucepan. Place hot coffee, warm milk, Coconut Cream Concentrate, chocolate chips, coconut oil, cocoa powder and cinnamon into a blender and blend for 20-30 seconds on high speed.

Pour blended coffee into 1 or 2 mugs and add marshmallow cream and graham cracker sticks, if desired.

Preheat the oven to 375 degrees ºF. Separate the onion slices into rings, saving the smaller, internal rounds for another use.

Place the coconut cream concentrate, eggs, water, salt, and smoked paprika in the blender and blend until smooth. Pour the batter in a shallow dish. Spread the flaked coconut in another shallow dish.

Oil a cookie sheet with coconut oil. Dip each onion ring into the coconut butter mixture to lightly coat, and then into the flaked coconut. Place in a single layer on the cookie sheet. When all of the onion rings are coated, bake for 15-20 minutes, or until the coconut is lightly browned. Sprinkle on additional salt, if desired. Serve hot.

These are traditional Christmas cookies in Switzerland. They’re called cinnamon stars and are usually coated with sugar frosting. This recipe offers is a healthy alternative for both the cookie and the frosting.

Preparation Time:  60 minutes

For the cookies:

  • 80 grams dried apple
  • 40 grams ground hazelnuts
  • 2 teaspoons cinnamon

For the frosting:

Place the dried apple pieces in your food processor, then transfer into a bowl. Mix in the hazelnuts and the cinnamon, blend together well with a spoon or your hands.

Now carefully add water until you get a dough. It doesn’t need much.

Roll the dough and cut out star shaped cookies. Put them on a dehydrator sheet and let them dehydrate for about 2 hours. This step isn’t necessary but cures them.

For the frosting heat up the coconut butter until it is has a peanut butter-like consistency. Mix it with the honey and water and spread it on the cookies.

Grease a small container (mine measured 7″ x 5″) and place a piece of parchment paper in the bottom, leaving enough on the edges for a handle.

If your coconut cream concentrate is not easy to stir, warm over low heat.

Mix all ingredients together and place in the container. Add honey to your taste preference.

The mixture will be quite thick. Use the back of a spoon to flatten the mixture into the container.

Place in freezer for 15-30 minutes or refrigerate for several hours. Keep chilled or frozen as it will melt at warmer room temperatures. This mixture could also be used as frosting.

Place all of your ingredients except the stock in a food processor, and pulse until the mixture is fairly smooth.

Refrigerate the mixture for 30 minutes so it will firm up.

In a deep skillet or a wok pan, heat about a quart of stock to a simmer–you want at least two inches of liquid to be able to poach the dumplings.

When the stock comes to a simmer, use two spoons to form the shrimp mixture into ovals, and drop them into the stock. Repeat until you have a total of 8. Let them simmer for 6-8 minutes, turning them once. Do not let the stock boil, just keep it at a simmer.

Once the dumplings are cooked through, either drain them well before browning them in coconut oil to serve as an appetizer, or add lightly steamed vegetables to the pot and serve the dumplings hot as a soup course.

In a small bowl, stir together all of the ingredients, reserving half of the lime zest. Spoon the mixture into candy cup wrappers.

Sprinkle the reserved lime zest over the tops of the candies and then refrigerate until firm. This makes about a dozen if you use large candy cups, or up to two dozen small ones.

Store in the refrigerator.

In a large mixing bowl, combine coconut cream concentrate with coconut oil, vanilla, and raw honey. Stir well with a fork until combined.

Add the coconut flakes, chia seeds, hemp seeds, flax seeds, tapioca starch, and salt. Combine very thoroughly with a fork until homogenous.

Scrape mixture into a 9×13 pan. Pat down evenly with a spatula or clean hands. Cover and refrigerate several hours, or until hardened.

Remove from refrigerator and cut into 2″ squares. Return to refrigerator for storage. Makes a great high-energy gluten-free snack!
