Heat a sauce pan and add coconut oil. Add garlic and onion. Saute for a minute, then add salt, mushrooms and sugar.

Saute on low heat till the onions and mushrooms are cooked. Add thyme and flour. Mix well and then add the chicken stock.

Bring to a boil and cook further for 7-8 minutes. Add coconut cream concentrate and mix well.

Blend the soup using a hand blender or in a blender jar.

  • 3 garlic cloves, crushed
  • 1 1/2 teaspoons salt
  • 3 tablespoons white wine vinegar
  • 1/3 cup coconut oil, plus more for drizzling
  • 1 1/2 pounds multicolored cherry tomatoes, halved (quartered if large)
  • 3 ears corn, shucked
  • 1 1/2 pounds medium zucchini
  • 8 to 9 ounces dried egg pappardelle
  • 1/4 pound sugar snap peas, strings discarded and peas halved diagonally
  • 1/2 cup thinly sliced red onion
  • 1 cup small basil leaves, chopped
  • 1/2 cup mint leaves, chopped
  • 1/3 cup chives, chopped

Bring an 8-quart pot of water to boil.

While the water is coming to boil, crush garlic through a press into a large bowl, add 1/2 teaspoon salt, stir together. Add vinegar, coconut oil, and 1 more teaspoon salt, toss to combine. Add tomatoes to the bowl, toss gently, set aside.

Cook the corn in boiling water for 4-6 minutes; remove with tongs and allow to cool.

Peel lengthwise ribbons from zucchini until you see seeds and rotate until you have peeled the entire zucchini. (Reserve seedy core of zucchini for use in a soup.) Set aside ribbons in a different bowl.

Cut cooled corn from cobs; add to tomatoes.

Cook the pasta until al dente. Just before its done, stir in zucchini ribbons and snap peas, cook 15 seconds. Drain and add pasta and peas to tomato mixture. Add onion (if using), then toss gently.

Now add herbs and toss gently again. Serve.

  • 1 pound asparagus spears, cut into 1″ pieces
  • 3 cups greens (preferably kale, spinach or mustard greens)
  • 2 cups baby potatoes, halved (any color variety)
  • 1 cup broccoli florets, finely chopped
  • 1 tablespoon coconut oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder

Combine ingredients in a large skillet over medium heat. Pan roast vegetables for about 10-15 minutes or until cooked through and slightly crispy, stirring occasionally.

Optional add-ins: sausage, ground beef or bison, and/or sauerkraut.

In a large skillet, combine coconut oil and sausage. Cook over medium heat until cooked through.

Add in butternut squash, salt, pepper, garlic powder, paprika and chili powder. Cook for about 8-10 minutes or until squash is soft.

Add in spinach and cook for another 3-5 minutes or until spinach is soft.

Serve onto 4 plates and top each with 1 tablespoon fermented sauerkraut.

  • 2 teaspoons fresh ginger, minced
  • 3 cups fresh kale and bok choy, chopped
  • 1 tomato, diced
  • 1 bunch green onion, chopped
  • 1 tablespoon fermented soy sauce

Heat coconut oil in a skillet over medium low heat. Add garlic and ginger, stirring for about 1 minute. Add all other ingredients and cook for approximately 5 minutes until the greens are wilted and stalks are tender.

  • 1 tablespoon coconut oil
  • 1 large bison roast
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1/2 cup water
  • 1 cup red wine

In a slow cooker, add coconut oil and spread over bottom and sides of cooker. Add in bison roast, onion and garlic. Sprinkle over salt, pepper and Italian seasoning. Pour water and red wine over roast. Cook on high for 4 hours or low for 8 hours. Gently shred roast with a fork and toss in red wine sauce mixture.

  • 2 tablespoons coconut oil
  • 3-4 chicken breasts, sliced into strips
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 3 tablespoons maple syrup
  • 1/3 cup dijon mustard

In a skillet, heat coconut oil. Add in chicken strips and sprinkle with salt, pepper, thyme and rosemary. Sauté for about 10 minutes.

Flip chicken strips and add in onions and garlic. Saute for another 10 minutes or until chicken strips are cooked through.

Pour in maple syrup and dijon mustard. Stir and cook for about 5 minutes to warm and caramelize sauce. Serve.

Skillet Chicken:

  • 2 tablespoons coconut oil
  • 2 large chicken breasts, cut into chunks
  • 1-2 cups pineapple fresh pineapple, cut into chunks
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • pineapple shells, for cooking

Berry BBQ Sauce: makes about 1 cup

  • 1/2 cup ketchup*
  • 1/4 cup blueberry jam/preserve
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons coconut oil
  • 1 teaspoon minced garlic
  • 1 teaspoon honey
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon chipotle pepper powder

In a large skillet, heat coconut oil. Add in chicken, paprika, salt, pepper and chili powder. Cook over medium heat for about 10 minutes.

Turn chicken over and place pieces of pineapple shell over chicken while it is cooking. This allows the chicken to steam cook and also allows pineapple juice to drip onto chicken. Cook for an additional 10 minutes or until chicken is cooked through. Remove pineapple shell and add in pineapple chunks. Sauté for just a couple minutes to get pineapple coated in seasonings.

Meanwhile, mix together sauce ingredients in a small bowl. Pour over chicken in skillet or serve on the side.
