Coconut Chicken with Plum Sauce

Dredge the chicken with the coconut flour, coating all sides. Sprinkle with the salt.

In a 12-inch skillet, heat coconut oil over medium heat. When it is melted, add the chicken pieces, skin sides down. Cook for 4-5 minutes, or until the skin is getting crispy. Flip over the chicken to let it brown for 2-3 minutes on the other side.

Stir together the water, vinegar, garlic, and pepper, and pour it around the chicken. Tuck the plum halves around the chicken pieces. Cover the pan and let it cook for 10 minutes, or until the chicken is cooked through. The sauce will thicken as it cooks, but for a thicker sauce, uncover the skillet and let it cook for an additional 3-5 minutes, or until the sauce is the desired consistency. Taste and adjust seasonings, if needed.

Preheat oven to 350 degrees F.

Combine all dry ingredients together, mixing well, and then add the wet ingredients. Drop by rounded teaspoonful onto cookie sheet.

Bake until golden on the edges, approximately 10 minutes, but begin checking at 8 minutes, as all oven temperatures vary.

Mix all ingredients in bowl and set it aside for 5 minutes to thicken and hydrate.

Once pan or griddle is heated, LIGHTLY grease it with coconut oil (too much will make them crispy and bubbly).

Pour slightly less than 1/4 cup of batter into middle of griddle, and smooth out, forming a nice circle (pouring in a spiral pattern may help). Once the edges just start to turn brown (about 1-2 minutes, but be sure to watch it closely), flip the tortilla with a spatula and cook for another 1-2 minutes.

Transfer cooked tortillas to a plate with another plate on top, a tortilla warmer, or a folded towel to keep warm.

Serve them with your favorite fixings for tacos, burritos, or as fajitas, like we did. Enjoy!

Preheat oven to 400 degrees.

Combine all the ingredients in the order listed in a large mixing bowl. Grease 9″ x 9″ pan with coconut oil, and pour mixture into pan.

Bake for 25-35 minutes, until the top is golden brown

Sweet Potato Latkes

Servings: approx. 24 latkes
Preparation Time: 12 minutes

Shred sweet potato and onion (I use the shredder attachment on the food processor). Remove and place between paper towels and pat dry. Put in bowl and mix in remaining ingredients except for oil.

Coat cast iron skillet with enough coconut oil to pan fry, and heat the oil on medium high. Form mixture into palm-sized balls then press to flatten slightly. Add to heated to oil. May need to flatten slightly more with a spatula. Cook on both sides until golden brown. Add salt as desired. Latkes are traditionally served with applesauce or sour cream.

Gluten Free Bread

Servings: 10-15 slices
Preparation Time: 35 minutes

Dry:

Wet:

1. Preheat oven to 350 degrees F.

2. Mix all dry ingredients together in a bowl.

3. In a separate bowl mix the wet ingredients.

4. Mix dry ingredients into wet (some recipes call for a food processor to mix, but I prefer this hand mixing for this dough-gives it a more authentic feel).

5. Grease a pan, no larger than 8’X 8’with coconut oil or butter and scoop batter into the pan.

6. Bake at 350 F for 20-25 min or until a toothpick comes out clean. Watch your baking time carefully not to burn your bread, it gets done fast.

7. Cool and serve.

Preparation Time: 15 minutes

1. Mix all dry ingredients, except for baking soda, together in a medium size bowl. Mix wet ingredients, except for vinegar, and add to dry ingredients. Let sit for a few minutes.

2. After batter has hydrated, add just enough extra liquid to make a batter that’s too thick to spread by itself. Add in baking soda and vinegar and mix just until incorporated.

3. Using an ice cream scoop, plop batter onto a greased or oiled skillet, spread out batter, and cook for a few minutes per side (until browned on both sides of pancake).

4. Top with your favorite toppings and enjoy!

Heat oven to 350 degrees. Place liners in muffin tin.

Mix all dry ingredients (except nuts) in large bowl. Blend all wet ingredients (except oil) in a blender or mixer. Add oil slowly.

Pour wet into dry; do not over mix. Fold in nuts if using. Allow to sit for 5 minutes.

Divide batter into 12 muffin tins.

Bake for 25-30 minutes at 350 degrees, until knife inserted into center comes out clean. Remove muffins from tin and allow to cool for at least 15 minutes before eating. Enjoy!
