Chicken Fried Rice

  • 2 pounds chicken breasts
  • ¼ cup coconut oil
  • 2 cups diced onion (or 2 small/ 1 large onion)
  • Himalayan Salt, to taste
  • 3 cups dried rice, pre-cooked according to package directions
  • 12-16 cloves garlic, pressed
  • 8 free range eggs
  • 1-2 tablespoons organic fermented soy sauce – to taste
  • 2 teaspoons toasted sesame oil
  • Freshly grated ginger (to taste)
  • 40 oz frozen mixed vegetables of choice
  • Black Pepper, to taste
  • Chopped green onions (optional)
  • Drained baby corn (optional)
  • Black or white sesame seeds, to taste (optional)

1. Cut up your chicken into small cubes (½ to 1 inch pieces).

2. In an 8 quart enamel cast iron pot (or wok), add your coconut oil, onions and chicken. Sprinkle with a layer of salt. Cook on medium-high heat until the chicken is thoroughly cooked. Add the garlic and ginger as the chicken is cooking. Note: If your onions are fresh (not frozen), then cook those down for about 4 minutes first, then add chicken.

3. Add frozen vegetables. Sprinkle a little salt over the surface again. Cook on medium-high heat until the vegetables are warmed through, about 10 minutes, sometimes covering the pot with its lid. While the veggies are cooking, crack all of your eggs into a bowl.

4. Push the pot contents to one side as best you can. Add the eggs to the emptier side and let them cook, scraping the cooked portions from the bottom. Season with a little salt and pepper as they cook. They will likely take about 5-10 minutes to completely cook. Once the eggs cook completely, incorporate them into the chicken and veggies.

5. Add your cooked rice, soy sauce and sesame oil. Stir to completely combine. Done!

6. Portion out your servings and top with chopped green onions and sesame seeds, if desired. Left-overs reheat beautifully on the stovetop. Just add a little water to the bottom of the pan.

Quick tips:

Recipe can easily be cut in ½ or quartered for desired servings.

You can omit chicken breasts on nights when you 1. don’t have any or 2. need a quicker meal.

I buy my organic onions in bulk. I dice many pounds all at once in a month and freeze them for quick access and faster cooking times.

Coconut Chicken Strips with Blackberry Mango Sauce

Sauce:

  • 1/4 cup blackberries
  • 3/4 cup mango, diced
  • 1 small jalapeno, seeded and diced
  • 1 teaspoon organic fermented soy sauce
  • 1 teaspoon tapioca starch

In a bowl, combine milk and lemon juice. Add chicken strips into milk mixture and let sit for a few minutes.

In a separate bowl, combine remaining ingredients and mix well. Gently coat each chicken strip in dry mixture and place in a skillet to fry or on a greased baking sheet. Pan fry in olive or coconut oil or bake at 400 °F for about 20 minutes (turning halfway through) or until chicken is cooked through.

While chicken is baking, place sauce ingredients in a small blender. Blend until smooth and pour into a saucepan. Bring mixture to boil, stirring constantly and cook for about 10 minutes. Remove from heat and let sit for a few minutes before serving with chicken strips.

  • 2 tablespoons coconut oil
  • 1 pound chicken, chopped into bite sized pieces
  • 2 cups chicken broth
  • 2 chicken bouillon cubes
  • 8 oz cream cheese
  • 1/4 cup coconut flour

Cook chicken in coconut oil in skillet.

While chicken is cooking, place all remaining ingredients in a blender and blend just until smooth. Pour into a saucepan on medium heat and bring to a boil. Add cooked chicken to broth, salt to taste. Serve over rice or pasta.

Almond Flour Pizza Crust with Coconut Oil:

Our Tropical Toppings:

  • 1/2 cup BBQ sauce (I used a sweet & spicy Chipotle BBQ) – divided portions
  • 1 1/2 cups diced roasted chicken
  • 2 cups shredded mozzarella
  • 8 ounces chopped pineapple
  • 1/4 cup shredded coconut
  • 1/2 purple onion – finely diced or sliced
  • Handful of chopped cilantro, stems removed

Mix crust ingredients together to form a dough. Will look just a bit sticky at this point. That is expected. Just let it rest in the bowl for 10 minutes.

Preheat the oven to 350 degrees ºF.

Tear off two pieces of parchment paper just larger than your pizza pan or stone. Cut one piece to the round shape and size of the pan or stone and make that the bottom piece. Place dough between the two pieces of parchment paper and roll it until desired thickness. You might find it more of a pressing out with the rolling pin rather than rolling, but just roll it out to the size of the bottom parchment piece. I made mine in a 15? round pan which produces a thin crust that is plenty sturdy to handle lots of toppings.

Remove the top paper and discard. Trim the edges into a nice round crust, like you might a pie crust edge then transfer the crust, leaving it on the bottom paper, to a pizza pan.

Bake for 10-15 minutes until middle is firm, just barely beginning to hint at browning, before the crust is too crispy because it will cook more after topping added. Don’t overcook at this point.

Take out of the oven and top with your desired pizza toppings. We used these:

Add a very thin layer of your BBQ sauce, using a spatula makes this easier to spread and get it evenly to the crust edge. Then add the cheese – ours is 2 cups of good quality mozzarella. Next, mix the remaining BBQ sauce with your deboned and cubed roasted chicken. Then cover the top evenly with the BBQ chicken. Sprinkle with the shredded coconut, the drained pineapple bits, and the finely diced purple onion.

Put the pizza back in the oven for about 10-15 minutes – until hot and the cheese is beginning to brown and bubbling.

Top the cooked pizza with the fresh chopped cilantro and serve!

1. Make the flavor mix: over medium heat melt butter and coconut oil with water, salt, pepper, parsley, and 1 teaspoon chicken seasoning. Depending on how much chicken you have you might need more or less of this. Set aside to cool.

2. Beat eggs, vinegar, milk and 1 tablespoon flavor mix together. Set aside. Mix coconut flour, einkorn flour, 1 teaspoon chicken seasoning and a pinch or two of black pepper together. Pour onto a plate. Set aside.

3. Add 1 cup chicken at a time to a food processor with 1 tablespoon of einkorn, 1/2 tablespoon flavor mix, 1/2 tablespoon milk, and red pepper. Blend until chunky (not too smooth). Empty into a bowl until all chicken has been mixed by repeating the process. Chicken mixture should be sticking but thick enough to hold together.

4. Work chicken into golf ball sizes, dunk first in milk bath coating all sides, then dunk in flour coating. Press down on nugget slightly to create a flatter nugget as you coat both sides. Set on a plate and repeat until you have enough to start cooking.

5. Heat palm shortening and coconut oil to medium-high heat. We prefer 3/4 palm shortening and 1/4 expeller pressed coconut oil for frying. Use just enough for nuggets to float. Slowly add nuggets to oil, enough to fill pan without crowding. Adjust heat as needed. After 1-2 minutes, flip nuggets with a fork and continue cooking until done.

6. Drain and cool nuggets. Serve with your favorite dipping sauce such as honey mustard, ranch, BBQ sauce, ketchup, etc. and enjoy!

  • 1 bunch green onions
  • 8 oz mushrooms, shiitake or button
  • 1 lb ground chicken breast
  • 1/2 pastured egg, beaten
  • 1 garlic clove, finely minced
  • 1 teaspoon salt
  • 14 oz full fat coconut milk*
  • 1/2 cup chicken broth (preferably homemade)
  • 1 tablespoon organic fermented soy sauce
  • 1 1/2 tbsp red curry paste
  • 1 1-2 inch piece of peeled fresh ginger

Chop the whites off of the onions and set the greens aside for the soup. Finely chop 1/2 cup of the mushrooms and save the rest for the soup.

Combine the chicken, egg, chopped whites, chopped mushrooms, minced garlic and salt in a bowl.

Form the meat into desired size meatballs and place in the bottom of the crockpot.

Combine the coconut milk, broth, soy sauce and curry paste in a mixing bowl. Add the remaining mushrooms and chopped greens from the onions. Pour over the meatballs and place the piece of ginger into the liquid.

Cook on high for 2 1/2 to 3 hours, add salt if needed

Quick notes

I imagine this will work in a soup pot or could also be cooked on the low setting of your crockpot for longer if need be. You could add some additional vegetables such as broccoli, red pepper and snow peas if you wanted to. It may not be as soupy, but still good!!! This would also be great served over cauliflower rice or white rice if you tolerate it.

Sweet Tea Fried Chicken Tenders with Coconut Oil

You will marinate the chicken tenders for at least 8 hours (I usually do 24 hours). Drain all sweet tea off of the tenders.

Mix the two eggs together well in one bowl for the egg wash. Mix panko, garlic salt and parmesan together in another bowl.

Dip each tender in the egg wash and let extra drip off then dip each tender in the bread crumb mixture.

Fry about 5 tenders at a time in a skillet with the virgin coconut oil for about 4 minutes on each side. Place chicken on a plate covered with paper towels to drain excess oil.

Serve with your favorite sides and dips for a delicious healthy friend chicken dinner.

*If gluten free, use gluten free breadcrumbs.

Gluten Free Homemade Egg Noodles

  • 4 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 2 cups gluten-free all purpose flour plus 1/2 cup for rolling out*

Beat eggs in heavy duty stand mixer, add coconut oil, water and salt. Continue mixing until coconut oil is broken up and evenly distributed. (It’s not necessary to melt the coconut oil first). Add flour and continue mixing thoroughly. Dough will form a nice ball.

Put dough on a flat, thoroughly floured surface and roll out with rolling pin until it is thin, turning as needed, so flour coats both sides and dough is no longer sticky.

Cut flat dough into strips of desired width — a pizza cutter works nice for this step. If dough sticks to the surface, use a spatula to lift.

To cook, put into salted boiling water for approximately 3 minutes. Adjust cooking time if needed.

These noodles can be frozen uncooked, then used as needed. They’re great for any noodle recipe like chicken noodle soup, or with a dish like beef burgundy or stroganoff.
